Tomorrow I should be getting my spider cage for my rear differential.
I have to remove all my bolts to put the spider on.
I'd like to be able to do this without having to mess with the gasket.
If I remove all the bolts, will the plate just fall off or do you think its somewhat siezed on?
If it does fall off, would any one recommend gasket-in-a-tube, or should I just get a stock replacement gasket?

It should be somewhat stuck on there, I always had to pry every one of my diff covers off. Also never had a problem with gasket maker or rtv silicone.

I think the half spider allows for steering clearance.

Does the 1/2 front Spider install over the stock front differential cover?

yeah, just pull the 7 bolts on bottom of diff plate, and put the half spider on with the 7 new bolts they supply. its made to go over stock diff covers and some aftermarket.
The full one fits over your stock diff cover too, you just replace all the bolts instead of half.
